This very sweet and gooey pie is chock-full of pecan halves coated with dark corn syrup, lightly beaten eggs, sugar and a splash of vanilla. This divine filling is poured into a prepared crust, and baked in a slow oven until golden and set.
INGREDIENTS (for 8 servings):
- 2 eggs
- 3/4 cup corn syrup
- 3/4 cup white sugar
- 1 1/2 cups pecan halves
- 1 teaspoon vanilla extract
- 1 recipe pastry for a 9 inch single crust pie
PREPARATION:
In a large mixing bowl, slightly beat the eggs.
Stir in corn syrup, sugar, and vanilla. Mix well.
Lightly stir in pecans, till well-coated with egg mixture.
Pour into pie shell. Bake at 350 degrees F (175 degrees C) for 20 minutes. Turn the oven down to 300 degrees F (150 degrees C), and bake for another 30 minutes.
Cool before serving. Store leftovers covered in refrigerator.
