INGREDIENTS (for 6 servings):
- 1 pound ground beef
- 4 potatoes, chopped
- 2 carrots, chopped
- 1 onion, minced
- 1 (46 fluid ounce) bottle tomato-vegetable juice cocktail
PREPARATION:
Preheat oven to 375 degrees F (190 degrees C).
In a large oven-proof pot, combine beef, potatoes, carrots, onion and vegetable juice. Cover and bake in preheated oven 1 1/2 hours.
