INGREDIENTS (for 2 servings):
- 2 cups small shrimp, cooked and shelled
- 1 scallion, chopped

- DRESSING:
- 1/2 cup mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon dill pickle relish
PREPARATION:
Make dressing by mixing well the mayonnaise, ketchup and relish.
Toss shrimp, scallions and dressing. Chill and serve.
Editor's Note:Check your labels when choosing your relish. Avoid sweet pickle relishes which are high in carbs. Your dill pickle relish should be 1g carb per tablespoon or less.
