A basic pancake recipe that can be dressed up with your favorite toppings.
INGREDIENTS (for 5 servings):
- 1 cup all-purpose flour
- 1 teaspoon white sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 tablespoon vegetable oil
- 1 teaspoon margarine, softened
PREPARATION:
In a bowl, stir together flour, sugar, salt and baking soda. In a separate large bowl, beat together eggs, milk, vanilla, vegetable oil and margarine. Stir dry ingredients into egg mixture; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
