Tasty bits of smoked salmon are simmered in a delectable sauce of onions, mushrooms and garlic, tomato paste, basil and a good measure of rich, nutty pesto. Serve over hot noodles for a very impressive entree.
INGREDIENTS (for 4 servings):
- 5 ounces smoked salmon
- 1 onion, chopped
- 1 clove crushed garlic
- 2 cups fresh sliced mushrooms
- 3/4 cup pesto
- 3 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh basil
- 1/4 cup water
- 8 ounces spaghetti
PREPARATION:
Cook pasta in a large pot of boiling water until al dente.
In medium skillet, cook olive oil, onion, mushrooms, and garlic until onion is transparent and mushrooms are well cooked. Stir in tomato paste, pesto sauce, chopped basil, water, and smoked salmon; cook gently for 5 - 10 minutes, or until desired consistency is achieved.
Drain pasta. Serve sauce over noodles.
