Tasty bits of smoked salmon are simmered in a delectable sauce of onions, mushrooms and garlic, tomato paste, basil and a good measure of rich, nutty pesto. Serve over hot noodles for a very impressive entree.

INGREDIENTS (for 4 servings):

PREPARATION:

  • Cook pasta in a large pot of boiling water until al dente.
  • In medium skillet, cook olive oil, onion, mushrooms, and garlic until onion is transparent and mushrooms are well cooked. Stir in tomato paste, pesto sauce, chopped basil, water, and smoked salmon; cook gently for 5 - 10 minutes, or until desired consistency is achieved.
  • Drain pasta. Serve sauce over noodles.
