It's apples and spice and everything nice in this delightful baked pork dish. Sauerkraut, crumbled bacon, brown sugar, dried thyme, zesty mustard, oregano and juniper berries meld with pork chops and spiced apple sauce to tickle your taste buds.
INGREDIENTS (for 6 servings):
- 3 cups sauerkraut, drained
- 2 cups spiced applesauce
- 1/2 cup chicken broth
- 1/2 pound bacon - cooked and crumbled
- 1 tablespoon brown sugar
- 1 teaspoon dried thyme
- 1/2 teaspoon ground mustard
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 7 juniper berries
- 4 pork chops
- 1 tablespoon vegetable oil
- 1/2 teaspoon paprika
PREPARATION:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl combine the sauerkraut, applesauce, broth, bacon, brown sugar, thyme, mustard, oregano, salt and pepper. Stir in optional juniper berries.
In a large skillet brown the pork in oil an drain. Place pork in an ungreased 9x13 inch baking dish. Spoon sauerkraut mixture over top and sprinkle with paprika. Cover and bake at 350 degrees F (175 degrees C) for 1 1/4 hours or until meat is tender and cooked through.
