In this simple vegetarian soup, fried potatoes are simmered in a broth with paprika, chopped red bell peppers and Serrano chilies.
INGREDIENTS (for 6 servings):
- 6 large potatoes, cubed
- 2 red bell peppers, seeded and diced
- 1 1/2 serrano chiles, finely chopped
- salt to taste
- ground black pepper to taste
- 1 dash paprika
- 2 tablespoons vegetable oil
- 8 cups water
PREPARATION:
In a saucepan, fry potatoes in oil until golden brown.
Stir in peppers, water, and seasonings. Cover, and simmer until potatoes are tender.
