INGREDIENTS (for 4 servings):
- 1 (10 ounce) package pre-washed fresh spinach
- 1 cup fresh green peas
- 1/4 cup olive oil
- 1 1/2 lemons, juiced
- 1/4 cup crumbled feta cheese
- salt and pepper to taste
PREPARATION:
In a large bowl, toss together the spinach, peas and olive oil until evenly coated. Add the lemon juice, feta and salt and pepper, and toss again.
