This recipe makes a great semi-sweet sauce for smoked barbecue ribs. Serve this warm on the side along with your ribs or baste directly on the ribs during the last 30 minutes of cooking.
INGREDIENTS (for 6 servings):
- 2 tablespoons butter
- 1 red onion, diced
- 1 clove garlic, crushed
- 6 tomatoes, diced
- 1/4 cup ketchup
- 2 tablespoons prepared Dijon-style mustard
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 1 teaspoon cayenne pepper
- 1 tablespoon ground New Mexico chile powder
- 1 tablespoon Worcestershire sauce
PREPARATION:
Melt the butter in a medium saucepan over medium heat. Stir in the onion and garlic and saute for 5 minutes. Add the tomatoes, reduce heat to medium low and simmer for 15 minutes. Then add the ketchup, mustard, brown sugar, honey, cayenne pepper, chili powder and Worcestershire sauce.
Simmer for 60 more minutes, then transfer mixture to a blender or food processor and puree until smooth.
