This is a family favorite - a plain teatime cake.
INGREDIENTS (for 1 servings):
- 5 eggs
- 1 cup white sugar
- 5 tablespoons boiling water
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon lemon extract
- 1 teaspoon vanilla extract
PREPARATION:
Separate eggs. Sift the flour, baking powder, and salt together three times.
In a large mixing bowl, beat yolks until lemon coloured. Add sugar a little at a time. Add the boiling water and the flour mixture. Whip the egg whites to soft peaks, and fold into the batter.
Pour the batter into an ungreased tube pan. Bake at 350 degrees F ( 175 degrees C) for 45 to 50 minutes. Remove the cake from the oven, and invert the pan over a bottle. Cool and remove from pan.
