Tuna, olives, lettuce, green onions, and celery are spooned into taco shells and dressed with a wonderful salsa/mayonnaise dressing with just a bit of cumin added for zest. A dollop of sour cream and your ready.
INGREDIENTS (for 6 servings):
- 2 (6 ounce) cans tuna, drained and flaked
- 1/2 cup sliced black olives
- 1/2 cup sliced green onion
- 1/2 cup sliced celery
- 2/3 cup salsa
- 1/2 cup sour cream
- 1 teaspoon ground cumin
- 1/2 head iceberg lettuce, shredded
- 12 medium taco shells
PREPARATION:
In a large bowl, combine the tuna, olives, green onions and celery; toss together.
In a medium bowl, whisk together the salsa, sour cream and cumin. Pour over tuna mixture; lightly toss to mix.
Line taco shells with shredded lettuce and spoon tuna mixture into shells. Drizzle with additional salsa or top with additional sour cream if desired.
