There's no need to cook this scrumptious sauce of fresh tomatoes stirred with mozzarella cheese, chopped basil, minced garlic, olive oil, salt and pepper. Just let the heady mix steep for a few minutes, toss with warm pasta, and cool before serving.
INGREDIENTS (for 6 servings):
- 1 (16 ounce) package linguini pasta
- 7 tomatoes, diced
- 1 pound shredded mozzarella cheese
- 1/3 cup chopped fresh basil
- 6 cloves garlic, minced
- 1/2 cup olive oil
- 1/4 teaspoon garlic salt
- ground black pepper to taste
PREPARATION:
In a large pot with boiling salted water cook linguini pasta until al dente. Drain.
Meanwhile, in large bowl combine the chopped tomatoes, grated mozzarella cheese, fresh basil, garlic, olive oil, garlic salt, and ground black pepper. Allow to stand at room temperature until pasta has finished cooking.
Toss drained and slightly warm pasta with tomato mixture. Serve cool.
