Fresh trout is dipped in milk, and coated with a mixture of ground almonds, saltine crackers, and fresh thyme before being grilled or pan-fried.
INGREDIENTS (for 8 servings):
- 2/3 cup saltine crumbs
- 1/3 cup ground almonds
- 3 tablespoons chopped fresh thyme
- 1/2 teaspoon pepper
- 2 pounds trout fillets
- 1/2 cup milk
- vegetable cooking spray
- Garnish: fresh thyme sprigs
PREPARATION:
COMBINE first 4 ingredients in a shallow dish. Dip fillets in milk; dredge in crumb mixture. Place in a grill basket coated with cooking spray; coat fillets with cooking spray.
COOK, covered with grill lid, over hot coals (400 degrees to 500 degrees) 5 minutes on each side or until golden. Garnish, if desired.
