Boneless chicken breasts can be used in place of turkey cutlets in this delicious recipe.
INGREDIENTS (for 2 servings):
- 1 1/4 cups chopped Granny Smith apple (about 8 ounces)
- 1 cup diced tomatoes
- 3/4 cup thinly sliced onions
- 3 tablespoons brown sugar
- 2 tablespoons cider vinegar
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 4 (2 ounce) turkey cutlets
- 1/8 teaspoon salt
- 1 dash white pepper
- 1 teaspoon vegetable oil
- cooking spray
PREPARATION:
Combine first 7 ingredients in a small saucepan, and bring to a boil. Cover, reduce heat, and simmer for 45 minutes, stirring occasionally. Remove apple mixture from heat, and let stand 10 minutes. Cover and chill. Sprinkle turkey with salt and pepper. Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add turkey to skillet; saute 2 minutes on each side or until done. Serve turkey with apple chutney.
