Granny Smith apples and shredded red cabbage are cooked in beef broth flavored with brown sugar, cider vinegar and celery seed in this recipe which also includes raisins and apple butter.
INGREDIENTS (for 7 servings):
- 2 tablespoons butter
- 1 onion, thinly sliced
- 1 Granny Smith apples - peeled, cored and sliced
- 3 cups shredded red cabbage
- 4 cups beef stock
- 1/2 cup cider vinegar
- 1/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon celery seed
- 1/3 cup raisins
- 1/4 cup apple butter
PREPARATION:
In a large saucepan, saute the apple and onion in the butter until tender. Stir in the cabbage and saute for 5 more minutes.
Pour in stock and vinegar; bring to a boil. Reduce heat and stir in sugar, salt, pepper, celery seed, and raisins. Simmer, uncovered, for an hour. Stir in apple butter.
