You could also call this Vegan Root Stew! Onions, carrots, potatoes, parsnips and turnips are cooked with rice and cumin for a hearty stew that will warm any chilly night.
INGREDIENTS (for 4 servings):
- 1 onion, chopped
- 3 carrots, chopped
- 3 potatoes, chopped
- 1 parsnip, chopped
- 1 turnip, chopped
- 1/4 cup uncooked white rice
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 2 1/2 cups water
PREPARATION:
In a large pot over medium-high heat, combine onion, carrots, potatoes, parsnip, turnip, rice, pepper, cumin, salt and water. Boil until vegetables are tender, about 30 minutes, adding more water if necessary.
