All you need is sugar, vinegar, a bit of butter, cream of tartar and the desire to get your hands on your candy to make this traditional pulled taffy from scratch.
INGREDIENTS (for 3 servings):
- 2 cups white sugar
- 1/2 cup vinegar
- 2 tablespoons butter
- 1/8 teaspoon cream of tartar
- 1 pinch salt
PREPARATION:
In a large saucepan over medium heat, combine sugar, vinegar, butter, cream of tartar and salt. Heat, without stirring, to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball. Remove from heat and let rest until cool enough to handle.
Pull taffy by stretching with hands, folding the candy over and repeating, until taffy is white and porous. Cut into 1 inch pieces with kitchen shears.
