My sons came up with the name for these much loved oatmeal, date-filled cookies that really do look like volcanoes when they're cooked!
INGREDIENTS (for 1 servings):
- 4 cups all-purpose flour
- 2 teaspoons salt
- 1 teaspoon baking soda
- 1 cup packed brown sugar
- 1 1/2 cups butter
- 2 eggs
- 1/2 cup molasses
- 2 cups rolled oats
- 1 cup dates, pitted and chopped
- 1/2 cup white sugar
- 1/4 cup water
- 1/2 cup chopped walnuts
PREPARATION:
Blend flour, salt, and baking soda. Add brown sugar, margarine, eggs and molasses. Stir until smooth. Blend in oats.
Roll dough out on floured board, about 1/8 inch thick. Cut with 2 1/2 inch round cutter. Place half of the rounds on an ungreased cookie sheet.
To Make Filling: Stir until boiling: 1 cup cut-up pitted dates, 1/2 cup sugar, and 1/4 cup water. Mixture will be thick. Stir in 1/2 cup chopped nuts. Cool before using.
Spread 1 teaspoon filling on center of each cookie. Cut a cross in the middle of the remaining rounds. Place over filling-topped rounds. Press down on the edges to seal. Bake 12-15 minutes at 350 degrees F (175 degrees C).
