I substituted walnuts for raisins in an old recipe, and came up with my husband's favorite cookies!
INGREDIENTS (for 2 servings):
- 1 cup rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup chopped walnuts
- 1/2 cup shortening
- 1/4 cup white sugar
- 1 egg
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
PREPARATION:
Preheat oven to 375 degrees F. Mix all ingredients at medium speed until well mixed, occasionally scraping bowl.
Drop by teaspoonfuls, 1 inch apart, on sheet.
Bake for 12 minutes or until lightly browned. Immediately remove cookies to wire racks and allow to cool.
