A combination of shortbread and macaroons, but not quite.
INGREDIENTS (for 1 servings):
- 1 cup all-purpose flour
- 1/2 cup butter
- 2 teaspoons brown sugar
- 3 tablespoons strawberry jam
- 2 eggs
- 1 1/2 cups packed brown sugar
- 2 tablespoons all-purpose flour
- 1 cup chopped walnuts
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
PREPARATION:
Preheat oven to 325 degrees F (170 degrees C).
To make Crust: Mix together first three ingredients and pack into the bottom of an 8 x 8 inch pan. Dot with strawberry jam.
To make Topping: Beat together the rest of the ingredients and pour over the crust.
Bake till firm for 30-35 minutes.
