Shredded zucchini is livened up by refreshing cilantro and zesty lime juice. This uncooked relish is easy to make and absolutely delicious.
INGREDIENTS (for 6 servings):
- 3 cups grated zucchini
- 1/3 cup chopped fresh cilantro
- 1/4 cup fresh lime juice
- 3 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon white sugar
PREPARATION:
In a medium bowl, mix together grated zucchini, cilantro, lime juice, oil, salt, and sugar. Pack into a jar or resealable container and refrigerate overnight before serving.
