Jiggling the Drumstick
To test for doneness, grasp the end of the drumstick with a paper towel. When it moves up and down and twists easily in its socket, the chicken is done.

Using a Thermometer
Insert an instant-read thermometer into the center of the inside thigh muscle (do not touch bone). The temperature should be 180°. (Or, place a regular thermometer into the bird before roasting; it stays in the bird until it’s done.)
