Make a basket of these light and airy muffins for a special occasion. Each is adorned with shredded orange peel and a dusting of sugar.
Removing Peel
With a vegetable peeler, pare away long, 1-in/ 2.5-cm-wide strips of the colored peel from an orange. Avoid the bitter white pith beneath.
Shredding Peel
With a small paring knife, cut each strip into very thin matchsticks.
Filling Mini-Muffin Moulds
Scoop up a rounded spoonful of batter. Use another spoon to push the batter into the prepared muffin mould. One spoonful should be enough to fill the mould three-quarters full.
