Cutting the Peel from an Orange
Slice off the top and bottom of an orange with a sharp paring knife. Set one flat end on a cutting board. Hold the orange and, working top to bottom, cut off 1-inch-wide strips of peel.
Sectioning an Orange
Work over a bowl to catch the juice. Insert a paring knife between the flesh and membrane of one section. Cut down to the center of the fruit. Turn the knife and slide it up the other side of the section to release it from the membrane on that side. Repeat with remaining sections.
