Pouring Batter
Use a 1/4-cup measure or ladle to portion out the batter so each pancake will be the same size. Scoop up the batter in the measure, then pour it out onto the hot griddle.
Turning Pancakes
When the top is bubbled across the surface and the edges look dry, turn the pancake over to cook the other side. Don’t turn it sooner, or the inside will be raw even if the exterior appears done.
