Crisp, puffy popovers are a crowd-pleaser as an appetizer or served with the main meal. As soon as you remove them from the oven, gently prick their surfaces to let the steam escape.
Filling Pans
After mixing the batter, transfer it from the bowl to a liquid measuring cup (the lip makes it easy to pour). Fill each greased mold halfway with batter.
Releasing Steam
Bake until crisp and golden brown. Remove from the oven to a rack and prick each popover once with a fork to release steam or the rolls will soften. For more crispness, return them to the oven briefly.
