You can hardly go anywhere in Great Britain without running into this grand staple. It is legendary in its traditional form, but we decided to come up with some variations, too, for adventuresome shortbread lovers.

Pressing into Mold
Press the dough into a prepared mold, working from the center to the edges. Be sure the dough fills every part of the mold. Gently pry the dough out of the mold, invert onto a greased cookie sheet, and bake according to the recipe directions.

Shaping by Hand
Or, pat the dough into a circle on a greased cookie sheet. Prick the dough deeply with a fork to divide it into 8 or 16 wedges.
